
Here is southern Missouri, the temperatures have finally starting falling. Which means, I get to break in my new crockpot! I LOVE crockpot meals. They are so easy and delicious. Cooking low and slow ensures that all that goodness melds together. And of course, crockpot meals are super easy, and I’m all about easy recipes.
In this post we’ll walk through the steps to make my crockpot bacon cheeseburger soup. You heard that right, this recipe is one I whipped up and the first original recipe on my blog! I typically post recipes that I find and have tried, so I can share with you all how they turned out. But this one is all mine! This is a big deal for me because it really shows how cooking from scratch will build your confidence. It may just be a bunch of ingredients dumped all in together into a crockpot, but to me it’s success and growth.
I have been cooking for years, but cooking from scratch is a whole new level for me. Tacos, spaghetti, macaroni and cheese. These are simple things that have been on my rotation for years. Cooking from scratch, however, causes me to be intentional about how I make them. For instance, with tacos I now think about farm raised beef, homemade tortillas (I haven’t actually done this one, yet), and home made taco seasoning. Before I would buy all these ingredients from the store, now I make as much of them as I can.
My point is, that my new found confidence has helped me to stumble onto this amazing recipe.
I love making slow cooked soups this time of year. I typically lean more toward chicken in soups or meatless soups.
Over the years and especially recently beef prices have gotten so expensive. It has been years since I have bought a steak and I rarely buy ground beef. BUT, we have finally gotten our Lowline Angus herd built up where we can start processing some of the cows for meat.
This has been a game changer for sure. Except now, I don’t really know what to make with all this beef (I know, I have all kinds of problems.)
You can never go wrong with a good “ol” fashioned burger (especially when it’s placed between these homemade burger buns.) I thought of all the flavors that you get from a burger and started putting them into the crockpot. This soup goes above and beyond with flavor thanks to low and slow cook time, as well as the bacon and extra cheese. Bacon makes everything better.
I will caution that although this is a very easy recipe, it’s not all “throw and go.” You will dirty at least two other dishes pre-cooking the hamburger and bacon before putting it all together in the slow cooker.
With that being said, let’s dive into this recipe.
Start by browning the hamburger and cooking the bacon. I used two separate pans for this job.


Next, let’s chop up the potatoes, onions, and pickles.





Grate the cheese.

Once that is done, it’s time to put everything in the slow cooker. I start with the meat. The ground beef didn’t look like it had any grease in it.
I probably should have drained and even rinsed it before putting it in the slow cooker. I also should have plated the bacon first to let some grease drain off. The soup had a little grease in it.


Add in the tomato paste, diced canned tomatoes, and tomato sauce.



The chopped veggies go in next.

And now the beef broth.

Hang in there! We’re almost done. At this point, add in all the spices, condiments, and the cheese.








Give it all a big stir. Put the lid on, and cook on low for 6-8 hours or high for 3-4 hours.
To serve, ladle the soup into a bowl and top with pickles, tomatoes, lettuce, and cheese.

How To Make Crockpot Bacon Cheeseburger Soup

Ingredients
Ground Beef- 1 lb., cooked and drained
Bacon- 1/2 of a package, cut into pieces and cooked
Beef Stock- 4 cups
Tomato Sauce- 1 14.5oz can
Canned Diced Tomatoes- 1 15oz can
Tomato Paste- 1 6oz can
Potatoes- 2-3 Diced
Pickles- 1 cup of diced pickles
Cheddar Cheese- 2 cups shredded (you can reserve some for topping)
Red onion- 1 small onion- Diced
Ketchup- 1/4 cup
Mustard- 1 Tbsp
Worcester Sauce- 1 Tbsp
Garlic Powder- 1 Tsp
Onion Powder- 1/2 Tsp
Parsley- 1/2 Tsp
Italian Seasoning- 2 Tsp
Salt and Pepper- To Taste
Directions
- Brown the ground beef and cook the bacon.
- To the crockpot add in the ground beef, bacon, tomato sauce, diced tomatoes, tomato sauce, potatoes, onions, pickles, beef broth. Stir together.
- Add in the ketchup, mustard, Worchester sauce, salt, pepper, garlic powder, onion powder, parsley, Italian seasoning, and cheese. Stir that all together.
- Place the lid on the slow cooker and cook on low 6-8 hours or on high 4-6 hours.
